The Thai Master School of Dachshund Cuisine

His Majesty, Thai the Magnificent, has graciously allowed What's her Name to put forth the idea of a cooking school, since it is obvious that Dad will starve to death soon, if he has to eat what she cooks!  The only edible recipes that she can make are those that she learned from her Mom, so we do know why Dad likes his meatloaf!  Dad left for Indianapolis today but came by for lunch.  To his surprise, What's her Name, with a LOT of assistance from The Thai Master Chef, made chicken salad!  The OFFICIAL Dachshund approved recipe follows:

The Thai Master Chicken Salad Deluxe 

INGREDIENTS
2 lg boned and skinless chicken breasts, baked at 425 for one hour in a pan coated in olive oil, and then shredded after it cools for half an hour
1/2 red onion, minced (leave out when making for your favorite canine)
8 lg radishes, minced
2 Tablespoons dry mustard
1/2 cup of mayonnaise 
pepper to taste

OPTIONAL INGREDIENTS- almonds, walnuts or pecans, finely chopped (NOT CANINE SAFE) ; dried cranberries- 1/2 cup of the nuts of your choice and a 1/2 cup of the dried cranberries; Chinese noodles

After the chicken has been completely shredded and fully cooled, mix the red onion, radishes, dry mustard, mayonnaise and pepper together in a medium mixing bowl.  Add the shredded chicken.  MAKE SURE THAT YOUR CANINE FRIEND ENSURED THAT THE CHICKEN IS SAFE ENOUGH TO USE BY ALLOWING A GENEROUS TASTE!

If so inclined, and NOT for canines- add the optional ingredients of your choice.
Chill for at least four hours, overnight is best.

Serve on a bed of lettuce, with cucumber slices, celery, carrots, and add your favorite salad dressing if so desired.  Chinese noodles also make a great crunchy addition.  Also makes a great sandwich!

OHHHHHHHHH my mom would LOVE this recipe. Never thought of radishes in Chic. Salad.

NOW.. If you are planning a Cook Book... DO NOT let Puddles NEAR the project.. we are still reeling from her PeeCan Pie demo.. I'm just sayin!!!
